The SNES games run great on my Zire 72, even with sound. The only problem is the controls. Since the SNES had four main button, and 2 shoulder buttons (plus start and select), how do you configure the controls to work well?

Map the center button on the d-pad and the power button to L and R. The rest of the hard buttons to A, B, X, Y. Then you're left with Start and Select to be mapped to the screen, since those are the less used and usually you don't have to press both at the same time (you can only press a screen-mapped button at a time).
Also I think the Zire 72 has a voice memo button or something? I don't know if it's mappable though.
