OK, first the NES, there are basically 5 Candidates here: Bombsweeper: A little uninspired, but working. You have to push around walls in order to get to the bomb... it's a little like Sokoban. Elite: Great game, but very complex and with a history of legal trouble, which is why I'm not sure we should use it. Tetramino: Very unpolished Tetris clone SackofFlour: Great Jump and Run game, with good graphics, but sadly also a little unstable SolarWars: ScorchedEarth clone with strange controls.
For me that only leaves Bombsweaper, which might not be the best game, but it's easy to understand and very stable.

SNES:
Bioworm... think of it as Pacman with guns. Very simplistic and maybe not the best representative for the complex SNES hardware, but very stable and polished. Frognes... Frogger clone, basically the same arguments as for Bioworm apply here. Hysteria: Vertical scrolling shooter game, with polished frontend but some ugly enemy sprites. Simple, but solid gameplay and a great intro. Pacman: What more is there to say? Snakeblaster: Split the snake by shooting a harthingy at it from below. Stable, but very ugly graphics and sound that was ripped from NBA Jam.
I'd reccomend Hysteria, but pretty much all candidates except Snakeblaster are an option.

NGP:
Invader: Like Space Invaders, but the other way around. Shoot down the buildings in order to land. Simple, but enjoyable. Maze: Find you way through the Maze. Polished and easy to understand Mine: Minesweeper. A bit too unpolished for my taste. Pacman: Standard, but with some drawing problems... Snake: The usual cellphone game... a bit plain, without any background graphics Spacies: Space Invaders... it's not really pretty. but it captures the arcade flair pretty well.
I think we can't go wrong with Spacies, but Maze and Invader are also options

GB/GBC
Demon3 (GBC): Good background graphics and music, but the really big player sprite and the amount of enemies make this game not very enjoyable. Drymouth (GBC): Extremely polished puzzle game with a good tutorial and intro. I think the gameplay is the same as Mario's Picross GBLander (GBC): Lander game with totally f***** up physics... Ironhike (GBC): Good Jump and Run game, but terrible sound and the graphics seem to be ripped mainly from SuperMario2 for the NES JetPacDX (GBC): Collect all Parts of the rocket which are scattered acros the screen and don't let the asteroids hit you. Simple Arcade action with acceptable graphics. Jumpman (GBC): I simply don't undertstand it and believe me, I've tried... Mainblow (GBC): You control a hellicopter and a vehicle at the same time... switch between them to get through the side scrolling levels. Nice Backgrounds. Long loading times. Hard. Marcbla 3D (GBC): Great 3D Flight simulator, but not much of a game
Drymouth and Ironhike are the only candidates for me and sicne Drymouth has great original graphics, I'd vote for it anytime.

GENS:
Berzerk: Kill all enemies without hitting the wall... looks like a C64 tribute. Hardwired: Great graphics, but it's only a demo for a game that was released commercially lateron, so I'd pass. Mine: Mineweeper... again. OogaBooga: Jump n Run, corrupted graphics Pong (yes, in black and white) Road (Lockup) Segala: good Gallaga Clone Ultimate tetris. Good background graphics, but little substance Zero Tolerance 1&2: above average FPS games, but they ARE pretty big and I'm not sure about their history... they WERE released into the public domain by the developers, however it was published through Accolade (now Infogrames) which for example holds the rights on the trademark
I'd vote for Segala... it's the only enjoyable game without a commercial background.

Hmm... Hans, once you've short-listed a bunch, we should run a poll and let people on here decide what the best ones to go with are I'd suggest having one "demo" and one game for each emulator.
