When launching Doom on my Zodiac, it crashes about four-fifths of the time. I haven't figured any consistent repro case, but I do see peculiar artifacts throughout the launcher.
The last status message during launch (before it crashes) is "couldn't open ###" where ### is always some random characters. Occasionally, it's a recognizable string from some other part of the Palm OS, but usually it's just invalid ASCII characters.
Additionally, in the control assign page, instead of the address code for each button, ZDoomZ displays strings from other applications. In my particular case, it displays text from the application TextPlus. If I uninstall TextPlus, the button addresses display as expected, but the filename is still scrambled when I try to launch.
ZHexenZ shows the same behavior in the control assign page if I have TextPlus installed, though Hexen never fails to launch.
I love it when Doom actually launches. I just have to keep resetting and trying it until it succeeds. It's amazing how much fun these games remain, even to this day.

Either something else you have in your system is incompatible, or your WAD files may be bad/incompatible.
From the date of your post I'll assume you are running v1.0, and 1.0 runs great on My Zodiac2. Version 1.1 has some problems, but it crashes on exit, not launch.
If you are running hacks or programs that take over default funtions (remapping controls, input, etc.) you might want to try disabling them before launching.
If you suspect it may be your WAD files, go to Wal*Mart and get the DOOM Collector's Edition CD for under $10. It has the WAD files for Ultimate DOOM, DOOM-II and Final DOOM (4 wads total).
