i know somebody has a wiki site, but i can't find it, and here is my experience:
Palm Treo 680 LJP 1.1 (top left corner) Settings? Im not sure, what settings are you looking for?
SNES -Super Punch out - blank scree - Rock n Roll racing - blank screen -Donkey kong country - blank screen -Super Mario Kart - nintendo symbol - Earthworm Jim - super slow and delayed -Super Mario World 2 - slow and delayed
i will update as i go along, let me know if anybody else has these issues

Apart from the details you provided, we also need to know what version of LJP you're using, what Palm device you're using, and what settings you're using for the SNES emulator.

Settings: are you using the C (slow and accurate) or ARM (fast but buggy) core, do you have any of the speedup fixes enabled, what blit settings are you using, is sound on or off, and what frameskip setting are you using? There's probably more, but that's a start

ARM Sound Off No speed up fixes that i know of frameskip - auto
I haven't played with that stuff, because i am unsure as to what everything is. I think i read on here that turning the sound off makes it run smoother

SNES should always be on frameskip 2-4; auto doesn't work very well with it. That should fix some of your speed issues.
Set the following for max SNES performance: Video: Smoothing: Off Display Size: x1 FrameSkip: 3 X Fast Sprites O Transparency Renderer: Fast Videomode: Default
Audio: Off
Other: CPU Core: ASM X Ign. fixed color changes O Ign. clip window changes O Ign. add/sub changes O Ign. palette writing
-For some games, you might have to set audio to 11KHz and enable some of the other options in the Other section. Also, some games aren't fully playable without Transparency enabled.

thanks for the info, that certainly sped things up , but the games still don't work on it that i listed above.

See the numerous other threads on here regarding those games and why they don't work. You need to run LJP 1.0RC8 or earlier to make them work.
