I looked at the sound options in LJP and saw SIM sound. What is/will this be?

It's simulated sound, you don't hear a thing, because the soundstreams aren't created when the sound is emulated. Some games do need the sound to be emulate to run them at all, that's why the option exists. (and it eats a little less CPU than when you put the volume down, so the games speed up a little bit)
